A key highlight of this menu design is the honor of collaborating with Chef Willment Leong, Continental Director for Asia and Board Member of the World Association of Chefs’ Societies, who helped create a signature healthy dish: Fjord Trout Confit Served with Phytonutrients Foam, Jam and Truffle Quinoa Aioli. Rich in omega-3 fatty acids and high-quality protein, the trout is prepared using a low-temperature confit technique to preserve nutritional value while keeping the flesh tender and easy to digest. The trout is complemented by a five-color vegetable foam rich in antioxidants.

●    Spicy Thai Consommé with New Zealand Orange Roughy: Prepared using a classic consommé simmering technique to draw out the natural umami of the ingredients, this premium deep-sea fish is high in quality protein, complemented by Thai herbs used in tom yum such as lemongrass, kaffir lime leaves, galangal, and other herbs that help reduce inflammation.
●    Grilled Shiitake with S-Pure Minced Chicken Breast, Cauliflower & Egg Yolk Purée: Shiitake mushrooms provide good-quality protein and are low in fat, helping to reduce cholesterol and support heart health. Cauliflower is rich in anti-cancer compounds and dietary fiber.
●    Wet-Aged Sea Bass, Thai “Lui Suan” Style:
Wet-aged sea bass is prepared using a preservation technique that maintains freshness and enhances tenderness. The fish is high in protein, low in fat, and rich in omega-3 fatty acids, while the herbal sauce provides antioxidant benefits and supports overall health.
●    Steamed Egg Custard with Onion Jus & Krill Shrimp:
Homemade steamed egg custard offers high protein, and onion extract sauce provides natural sweetness without added sugar. Krill is high in calcium and rich in omega-3 fatty acids as well as astaxanthin, known for its antioxidant properties. Water Pennywort, a traditional herb, helps reduce bloating and diarrhea.

In addition to the newly designed dishes, selected signature Copper favorites have also been curated as healthy menu options under the “Healthier Choice Recommended by Samitivej” label, certified by dietitians. There are a total of six dishes, including: Pan-seared Norwegian Fjord Trout Fish Veloute, Yuzu Foam, Wet-aged Seabass with Argentinian Prawn and Porcini Cream, Maguro Salad with Japanese Pumpkin Sauce, Cured Wet-aged Seabass, Grapes with Tomato Essence, Krill Chawanmushi and Pineapple Gazpacho.
